Bullets can cause distraction and annoyance and even pain, they just can't kill the ayakashi.
Bullets with holy water is definitely something that someone could devise.
I don't believe the subject of shinki heartbeats have ever come up in canon, so I would say that no, shinki do not have a pulse.
